Whole Grain Banana Bread

Whole Grain Banana Bread

Dry Ingredients:

1 c whole grain oatmeal
1 c whole wheat flour
1/4 c ground flaxseed
1/2 c chopped walnuts
1/3 c demerara sugar (or turbinado)
1 tsp baking soda
1 t baking powder
1/2 t ground allspice

 

Wet Ingredients:

1/4 c olive oil
1/4 c orange juice (not from concentrate)
1/3 c plain Greek yogurt
3 ripe bananas, mashed
1 egg
2 t pure vanilla extract

 

Ingredients for the topping:

1‐1/2 T whole grain oatmeal
1‐1/2 T brown sugar (or demerara or turbinado)
1/2 t cinnamon
4 to 5 slices of banana

 

Instructions – how to make whole grain banana bread:

Combine dry ingredients in a medium size mixing bowl. In a separate larger bowl, mix wet ingredients together thoroughly. Add dry ingredients to wet, mixing only until combined. Pour mixture into a lightly greased loaf pan.

In a separate small dish, combine the topping ingredients – oatmeal, sugar and cinnamon and sprinkle on top of loaf. Finish with a few slices of banana overtop.

Bake at 375F for 50 minutes. Turn oven off and allow loaf to sit in warm oven for another 15 minutes. If the top of the loaf is getting too dark, loosely tent with foil. Remove banana bread from oven and allow to cool on baking rack before serving.

Honey Banana Bread

Honey Banana Bread

Ingredients:

  • 3 peeled ripe bananas
  • 3/4 cup honey
  • 1/4 cup melted butter
  • 1/2 teaspoon baking soda
  • 1 1/2 cups whole wheat flour 1 big bowl

 

Instructions – how to make honey banana bread:

Turn the oven on to 350 degrees.
Melt 1/4 cup of butter in a pan.
Put the peeled bananas in a bowl.
Mash up the bananas with the back of a fork.
Add the melted butter.
Add: 1/2 teaspoon baking soda, 1 1/2 whole wheat flour, 3/4 cup honey
Stir everything in the bowl with the big spoon. Stir until everything is mixed together.
Pour the mix into the oiled bread pan.
Bake for one hour.
After one hour, put a toothpick in the bread. If there is some bread on the toothpick when you pull it, then let the bread cook for a little while longer. If there is no bread on the toothpick when you pull it out, the bread is done!
Take the bread out of the oven. Take it out of the pan, and put it on the wire rack.
When the bread is cool, cut it up and it’s ready to serve!

Ingredients:

  • 4 mashed bananas
  • 1 lb. of tofu (broken with fork, not too small)
  • 1 cup of oil
  • 1⁄2 cup of wheat germ
  • 6 tbsp. of milk
  • 1 tsp. of salt
  • 2 tsp. of vanilla extract
  • 11⁄2 cups of grated coconuts
  • 3 cups whole wheat flour
  • 4 tsp. of baking powder

Instructions – how to make tofu and banana bread

Preheat oven to 352 F.
Mix flour and baking powder. Put aside.
Mix all other ingredients together in large bowl.
Incorporate flour, stirring until firm.
Place in greased and slightly floured bread pan.
Cook in oven 1 hour.

Whole Wheat Cinnamon-Chocolate Chip Banana Bread

Ingredients:

1 cup all-purpose flour
1 cup white whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/4 cup flax seed meal
1/4 cup wheat germ
2 teaspoons ground cinnamon
1 1/2 sticks (3/4 cup) unsalted butter, softened
3/4 cup brown sugar
1/2 cup sugar
2 large eggs
1 tablespoon vanilla
1 1/2 cups mashed banana (from 3 large, ripe bananas, a little more or less won’t hurt)
1 1/2 cups chocolate chips
