Dry Ingredients:

1 c whole grain oatmeal
1 c whole wheat flour
1/4 c ground flaxseed
1/2 c chopped walnuts
1/3 c demerara sugar (or turbinado)
1 tsp baking soda
1 t baking powder
1/2 t ground allspice

 

Wet Ingredients:

1/4 c olive oil
1/4 c orange juice (not from concentrate)
1/3 c plain Greek yogurt
3 ripe bananas, mashed
1 egg
2 t pure vanilla extract

 

Ingredients for the topping:

1‐1/2 T whole grain oatmeal
1‐1/2 T brown sugar (or demerara or turbinado)
1/2 t cinnamon
4 to 5 slices of banana

 

Instructions – how to make whole grain banana bread:

Combine dry ingredients in a medium size mixing bowl. In a separate larger bowl, mix wet ingredients together thoroughly. Add dry ingredients to wet, mixing only until combined. Pour mixture into a lightly greased loaf pan.

In a separate small dish, combine the topping ingredients – oatmeal, sugar and cinnamon and sprinkle on top of loaf. Finish with a few slices of banana overtop.

Bake at 375F for 50 minutes. Turn oven off and allow loaf to sit in warm oven for another 15 minutes. If the top of the loaf is getting too dark, loosely tent with foil. Remove banana bread from oven and allow to cool on baking rack before serving.

Ingredients:

Bread:

3 eggs
1 cup of vegetable oil
2 cups of sugar
3-4 mashed overly ripe bananas
2 teaspoons of vanilla extract
1 teaspoon of salt
1/4 teaspoon of baking powder
3 cups AP flour
1 tablespoon of cinnamon
1 teaspoon of baking soda

 

Topping:

6-8 tablespoons of butter, melted and cooled
3/4 cup AP flour
½ cup sugar
¼ cup + 2 tablespoons brown sugar, packed
½ teaspoon of cinnamon
¼ teaspoon of baking powder
¼ teaspoon of salt

 

Instructions – how to make banana bread with streusel:

Melt butter & cool, mix in other ingredients with a fork until crumbly. Squeeze with hands and break up into smaller pieces, if needed.
Preheat oven to 325 degrees. Spray 2, 8 x4 inch pans with non stick baking spray.
In a large bowl beat eggs until light and frothy. Mix in the oil and sugar.
Stir in the bananas and vanilla.
In another bowl, combine the flour, cinnamon, baking soda, baking powder, and salt.
Pour the flour mixture into the egg mixture and mix until combined.
Divide the batter between the 2 pans, top evenly with the topping.
Bake for 55-65 minutes or until a toothpick comes out clean when inserted.

Ingredients:

  • 2 c. Oat Flour
  • 1⁄2 c. unsweetened cocoa powder
  • 1 1⁄2 tsp. baking powder
  • 1⁄4 tsp. salt
  • 1⁄2 tsp. cinnamon
  • 2/3 c. coconut sugar (can use 1/3)
  • 1 TB. ground flax mixed w/ 3 TB. water
  • 2 tsp. vanilla extract
  • 3-4 large bananas mashed
  • 1⁄2 c. melted and cooled coconut oil
  • 1⁄4 c. non dairy milk (I used coconut)
  • 4 ounces dark chocolate melted
  • 1⁄2 c. dark chocolate chips tossed w/ 1⁄2 tsp. flour
  • 3⁄4 c. diced strawberries tossed w/ 1 tsp. flour

 

Instructions – how to make chocolate and strawberry banana bread

Preheat oven to 350 degrees F. Grease a loaf pan.
In a bowl, whisk together flour, cocoa, salt, cinnamon, & baking powder.
In another bowl whisk together flax mixture and sugar until smooth.
Whisk in vanilla. Then add bananas and milk and stir until combined.
Add in dry ingredients and stir with a large spoon until it comes together.
Add melted coconut oil, then melted chocolate and combine.
Fold in chocolate chips and strawberries.
Bake for 55-60 minutes, or until fully baked.
Remove from oven and let cool before removing from pan and cutting.

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup light brown sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon pure vanilla extract
  • 2 large ripe bananas, mashed (about 1 cup)
  • 1 cup fresh strawberries (cut into bite sized pieces)
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions – how to make strawberry banana bread:

Preheat oven to 350 degrees F.
Grease and flour loaf pans or line a 12 cup muffin pan with paper liners or grease with butter or a vegetable spray.
In a medium sized bowl whisk together the brown sugar, eggs, and mashed banana.
Add the melted butter to the brown sugar mixture and stir to combine.
In another large bowl combine the flour, baking powder, baking soda, cinnamon, and salt.
Gently fold in the berries, making sure they are coated with flour. This helps to prevent the berries from sinking during baking.
Add the wet ingredients to the dry ingredients and stir only until the ingredients are just combined. Do not over mix the batter or you will end up with tough bread.
Place batter in loaf pan, 3 mini loaf pans, or 12 muffin cups.
Put in the oven and bake until a tester inserted in the center of a loaf comes clean about 30-35 min.
If you made muffins 20 to 25 minutes. Transfer to a wire rack to cool.

Makes 1 large loaf, or 3 mini loaves, or 12 regular sized muffins.

Ingredients:

  • 4 mashed bananas
  • 1 lb. of tofu (broken with fork, not too small)
  • 1 cup of oil
  • 1⁄2 cup of wheat germ
  • 6 tbsp. of milk
  • 1 tsp. of salt
  • 2 tsp. of vanilla extract
  • 11⁄2 cups of grated coconuts
  • 3 cups whole wheat flour
  • 4 tsp. of baking powder

Mix flour and baking powder. Put aside.
Mix all other ingredients together in large bowl.
Incorporate flour, stirring until firm.

Ingredients:

  • 175g/6oz of unsalted butter, softened
  • 175g/6oz of sugar (half light muscovado, half golden caster)
  • 75g/21⁄2oz of hazelnuts
  • 2 free-range eggs
  • 175g/6oz of self-raising flour
  • 2 very ripe bananas (about 250g/9oz total weight)
  • drop of vanilla extract
  • 175g/6oz of good-quality dark or milk chocolate chips
  • a little demerara sugar

Instructions – how to make black banana bread:

1. Preheat the oven to 170C/325F/Gas 3. Line the base and sides of a 20cm x 12cm/8in x 5in loaf tin with baking parchment.
2. Beat the butter and sugars until light and coffee-coloured. This is best achieved in a food mixer.
3. Toast the hazelnuts, rub them in a tea towel to remove their skins, then grind quite finely.
4. Slowly add the eggs to the butter and sugar mixture, then mix in the toasted ground hazelnuts and self-raising flour.
5. Peel the bananas and chop them the small pieces.
6. Gently fold the vanilla extract, the bananas and the chocolate chips into the cake mixture, turning gently and taking care not to overmix.
7. Scoop the cake batter into the prepared loaf tin. Dust with a little demerara sugar.
8. Bake for between 1 hour and 1 hour 10 minutes, covering the cake with foil if the top starts to darken too quickly.

  • 2/3 cup each all-purpose flour, white whole wheat flour, and almond meal
  • 3/4 cup light brown sugar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 very ripe bananas, shmooshed into oblivion
  • 2 tablespoons each plain yogurt and sour cream (or 1/4 cup of either one)

Banana Walnut Loaf

Ingredients:

  • 1⁄2 cup of buttermilk, 80°–90°F
  • 2⁄3 cup of unsalted butter, 1⁄2-inch pieces at room temperature
  • 2 eggs, large, at room temperature
  • 1 1⁄2 teaspoons of pure vanilla extract
  • 1 1⁄2 cups of mashed bananas
  • 1 teaspoon of salt
  • 1 1⁄3 cups of granulated sugar
  • 2 2⁄3 cups of  unbleached all-purpose flour
  • 1 teaspoon of baking powder
  • 1 1⁄2 teaspoons of baking soda
  • 3⁄4 cup of chopped walnuts

 

Instructions – how to make banana walnut loaf:

Place ingredients, in order listed, in bread pan fitted with kneading paddle. Place in Cuisinart Convection Bread Maker. Press Menu and select Quick Bread/Cake. Press Crust and select Medium (or to taste). Press Loaf and select dough size. Press Start to mix and bake. After batter has mixed for 4 minutes, stir sides and bottom of bread pan with rubber scraper to ensure complete mixing. Allow to continue mixing. When tone sounds, press Pause and remove kneading paddle if desired. Press Start to continue baking. When cycle is completed, remove bread from machine and transfer to wire rack to cool. Bread slices best when allowed to cool. If not serving after cooling, wrap in plastic wrap to maintain freshness when completely cooled.

Banana bread is a kind of bread that is made using mashed fully ready bananas. It is a moist, fairly sweet, cake-like loaf of bread. Banana bread very first started to be a regular element of US cookbooks with the popularization of baking soda along with baking powder in the 1930s, was published in Pillsbury’s 1933 Balanced Recipes cookbook, later on received more popularity with the launch of the first Chiquita Banana’s Recipe Book in 1950.
