- 4 mashed bananas
- 1 lb. of tofu (broken with fork, not too small)
- 1 cup of oil
- 1⁄2 cup of wheat germ
- 6 tbsp. of milk
- 1 tsp. of salt
- 2 tsp. of vanilla extract
- 11⁄2 cups of grated coconuts
- 3 cups whole wheat flour
- 4 tsp. of baking powder
Instructions – how to make tofu and banana bread
Preheat oven to 352 F.
Mix flour and baking powder. Put aside.
Mix all other ingredients together in large bowl.
Incorporate flour, stirring until firm.
Place in greased and slightly floured bread pan.
Cook in oven 1 hour.
