Banana, Honey and Cinnamon Bread

Ingredients:

2 cups of plain flour
2 teaspoons of baking powder
1 teaspoon of bicarbonate of soda
Pinch of salt
1 1/2 teaspoons of ground cinnamon
1/2 a cup of caster sugar
2 eggs
1 cup of reduced fat milk
1/4 a cup of honey
3 medium very ripe bananas, mashed

 

Instructions – how to make banana, honey and cinnamon bread

Preheat oven to 180 C. Line base and sides of a large loaf pan (about 23cm long x 10cm wide x 8cm deep) with non-stick baking paper.
Sift flour, baking powder, bicarbonate of soda, salt and cinnamon into a large bowl. Stir in sugar.
Combine eggs, milk, honey and mashed bananas in a large jug. Whisk until combined.
Make a well in the centre of dry ingredients and using a metal spoon, gently fold in honey and egg mixture until well combined. Spoon mixture into prepared pan.
Bake for 45-55 minutes or until a skewer inserted in the centre comes out clean.
Cool in pan for 10 minutes then turn onto a wire rack to cool completely.
Slice and serve lightly buttered or toasted if desired.

Serves 8.

Almond-Scented Chocolate Chip Banana Bread

Ingredients:

  • 2/3 cup each all-purpose flour, white whole wheat flour, and almond meal
  • 3/4 cup light brown sugar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 very ripe bananas, shmooshed into oblivion
  • 2 tablespoons each plain yogurt and sour cream (or 1/4 cup of either one)
  • 2 eggs, at room temperature, lightly beaten
  • 3/4 stick butter, melted and cooled slightly
  • 1/2 teaspoon each almond extract and vanilla extract
  • 1/2 cup mini chocolate chips

Banana Bread

Ingredients:

  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 cup mashed ripe banana (~2 large bananas)
  • 3/4 teaspoon grated lemon rind
  • 1 1/2 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts and/or chocolate chips

 

Instructions – how to make banana bread:

Heat oven to 325F.
In large mixer bowl, beat together sugar, oil and eggs. Stir in bananas and lemon rind. Sift together flour, baking soda and salt. Then add to banana mixture and stir until combined.
Fold in nuts and/or chocolate chips.
Pour into well-greased 9x5x3 inch loaf pan.
Bake for 50-60 minutes or until done (toothpick test).
Remove from pan and cool on wire rack.

Ingredients:

  • 1⁄2 cup of buttermilk, 80°–90°F

  • 2 2⁄3 cups of  unbleached all-purpose flour
  • 1 teaspoon of baking powder
  • 1 1⁄2 teaspoons of baking soda
  • 3⁄4 cup of chopped walnuts

 

Instructions – how to make banana walnut loaf:

Place ingredients, in order listed, in bread pan fitted with kneading paddle. Place in Cuisinart Convection Bread Maker. Press Menu and select Quick Bread/Cake. Press Crust and select Medium (or to taste). Press Loaf and select dough size. Press Start to mix and bake. After batter has mixed for 4 minutes, stir sides and bottom of bread pan with rubber scraper to ensure complete mixing. Allow to continue mixing. When tone sounds, press Pause and remove kneading paddle if desired. Press Start to continue baking. When cycle is completed, remove bread from machine and transfer to wire rack to cool. Bread slices best when allowed to cool. If not serving after cooling, wrap in plastic wrap to maintain freshness when completely cooled.
