Ginger Banana Bread

Ginger Banana Bread

Ingredients

8 oz self raising flour
1 teaspoon ground ginger
4 oz corn syrup
4 oz butter
4 oz Demerara sugar
6 oz golden syrup
1 egg
3 ripe bananas

 

Instructions – how to make ginger banana bread:

Preheat the oven to 320 degree (F).
Mix the flour and the ginger in a bowl.
Melt together the treacle, butter, sugar and golden syrup.
Beat the egg and mash the bananas well. Mix all the ingredients in a bowl.
Bake for 45 minutes to 1 hour.
Leave to rest for 10 minutes in the tin before turning out on a wire tray.
To reheat, slice and place in the microwave for a very short time: a few seconds should do it.

Ingredients

2 cups well-mashed banana
1 cup strong black coffee
3/4 cups each raisins or nuts (optional)

 

Ingredients for butter mixture:

1 and 1/2 cups melted butter
1 and 3/4 cups brown sugar or 1 and 1/2 cups honey
4 eggs, room temperature
2 and 1/2 teaspoons vanilla
1/2 teaspoon almond extract
grated rind of one orange

 

Ingredients for flour mixture:

2 cups whole wheat
2 cups white flour
1 teaspoon salt
1/2 teaspoon baking soda
3 teaspoons baking powder
1/2 teaspoon nutmeg
2 teaspoons ground cinnamon

 

Instructions – how to make coffee banana bread:

Preheat the oven to 350 degree (F).
Beat in a large bowl sugar and butter, add eggs one at a time, add remaining butter mixture ingredients, and beat until light in color.
Sift together twice the flour mixture ingredients.
Soak banana in coffee.
Add flour mixture and mashed banana alternately to butter mixture, beginning and ending with flour (flour, banana, flour, banana, flour) after each addition mix gently to combine, but do not beat or otherwise over mix – this toughens and dries the the cake.
Add 3/4 cups raisins or nuts last (optional).
Generously butter two loaf pans and sprinkle with sesame seeds.
Divide batter and bake.
Serve plain or with butter or cream cheese.

(Cool ten minutes in the pan, then remove to finish cooling)

3 ripe bananas, mashed
1 3/4 cups of flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter
2/3 cup sugar

6-8 tablespoons of butter, melted and cooled
3/4 cup AP flour
½ cup sugar
¼ cup + 2 tablespoons brown sugar, packed
½ teaspoon of cinnamon
¼ teaspoon of baking powder
¼ teaspoon of salt

 

Instructions – how to make banana bread with streusel:

Melt butter & cool, mix in other ingredients with a fork until crumbly. Squeeze with hands and break up into smaller pieces, if needed.
Preheat oven to 325 degrees. Spray 2, 8 x4 inch pans with non stick baking spray.
In a large bowl beat eggs until light and frothy. Mix in the oil and sugar.
Stir in the bananas and vanilla.
In another bowl, combine the flour, cinnamon, baking soda, baking powder, and salt.
Pour the flour mixture into the egg mixture and mix until combined.

Bake for 55-65 minutes or until a toothpick comes out clean when inserted.

Ingredients:

  • 1 3/4 cups of self raising flour
  • 1/4 cup plain flour
  • 2/3 cup firmly packed brown sugar
  • 3/4 cup mashed ripe banana
  • 1/2 cup reduced fat milk
  • 2 eggs lightly whisked
  • 50g butter melted cooled
  • l tsp vanilla essence
  • 250g fresh or frozen blueberries

Pre-heat oven to 180 degrees F, brush a 20 x 10cm loaf tin with melted butter and line the base with grease proof paper.

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup light brown sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon pure vanilla extract
  • 2 large ripe bananas, mashed (about 1 cup)
  • 1 cup fresh strawberries (cut into bite sized pieces)
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions – how to make strawberry banana bread:

Preheat oven to 350 degrees F.
Grease and flour loaf pans or line a 12 cup muffin pan with paper liners or grease with butter or a vegetable spray.
In a medium sized bowl whisk together the brown sugar, eggs, and mashed banana.
Add the melted butter to the brown sugar mixture and stir to combine.
In another large bowl combine the flour, baking powder, baking soda, cinnamon, and salt.
Gently fold in the berries, making sure they are coated with flour. This helps to prevent the berries from sinking during baking.
Add the wet ingredients to the dry ingredients and stir only until the ingredients are just combined. Do not over mix the batter or you will end up with tough bread.
Place batter in loaf pan, 3 mini loaf pans, or 12 muffin cups.
Put in the oven and bake until a tester inserted in the center of a loaf comes clean about 30-35 min.
If you made muffins 20 to 25 minutes. Transfer to a wire rack to cool.

Makes 1 large loaf, or 3 mini loaves, or 12 regular sized muffins.

Coconut Banana Bread

Ingredients:

  • 1/3 c. soft butter
  • 2/3 c. sugar
  • 2 eggs
  • 3 T. milk
  • 1 t. lemon juice
  • 1⁄2 t. almond extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1⁄2 teaspoon baking soda
  • 1⁄2 teaspoon salt
  • 1 cup mashed banana
  • 1 cup toasted coconut

Instructions – how to make coconut banana bread:

Cream butter and sugar. Beat in eggs. Add milk, lemon juice and almond extract. Add flour, baking powder, soda, and salt. Mix together.

Stir in bananas and fold in coconut. Pour into greased and floured loaf pan.

Bake at 325° for 1 hour and 10 minutes, or until a toothpick inserted in center comes out clean.

Cool in pan for 10 minutes. Turn out on wire rack to finish cooling.

Black Banana Bread

Ingredients:

  • 175g/6oz of unsalted butter, softened
  • 175g/6oz of sugar (half light muscovado, half golden caster)
  • 75g/21⁄2oz of hazelnuts
  • 2 free-range eggs
  • 175g/6oz of self-raising flour
  • 2 very ripe bananas (about 250g/9oz total weight)
  • drop of vanilla extract
  • 175g/6oz of good-quality dark or milk chocolate chips
  • a little demerara sugar

Instructions – how to make black banana bread:

1. Preheat the oven to 170C/325F/Gas 3. Line the base and sides of a 20cm x 12cm/8in x 5in loaf tin with baking parchment.
2. Beat the butter and sugars until light and coffee-coloured. This is best achieved in a food mixer.
3. Toast the hazelnuts, rub them in a tea towel to remove their skins, then grind quite finely.
4. Slowly add the eggs to the butter and sugar mixture, then mix in the toasted ground hazelnuts and self-raising flour.
5. Peel the bananas and chop them the small pieces.
6. Gently fold the vanilla extract, the bananas and the chocolate chips into the cake mixture, turning gently and taking care not to overmix.
7. Scoop the cake batter into the prepared loaf tin. Dust with a little demerara sugar.
8. Bake for between 1 hour and 1 hour 10 minutes, covering the cake with foil if the top starts to darken too quickly.

1/4 cup flax seed meal

2 teaspoons ground cinnamon

3/4 cup brown sugar

1 tablespoon vanilla
1 1/2 cups mashed banana (from 3 large, ripe bananas, a little more or less won’t hurt)
