- 1 3/4 cups of self raising flour
- 1/4 cup plain flour
- 2/3 cup firmly packed brown sugar
- 3/4 cup mashed ripe banana
- 1/2 cup reduced fat milk
- 2 eggs lightly whisked
- 50g butter melted cooled
- l tsp vanilla essence
- 250g fresh or frozen blueberries

Pre-heat oven to 180 degrees F, brush a 20 x 10cm loaf tin with melted butter and line the base with grease proof paper.
Sift combined flour info a large bowl, stir in sugar.
Combine banana, milk, egg and butter and vanilla in a medium bowl.
Add mixture and blueberries to flour mix and stir until just combined.
Spoon mix into prepared cake tin.
Bake in the oven for 55 minutes or until skewer comes out clean.
Set aside to cool in pan for 5 minutes before turning onto a wire rack.
Cut into slices to serve.
